At the moment, there’s no limit on how many Collections you can add to a Project.
That said, if your goal is to get more precise answers from the Agent, it’s usually better not to group too many Collections into a single Project.
When a Project contains too many different topics, the Agent needs to reference more information, and the answers may become less focused.
